Tuscan Pizza

12 cups pear s, cored and sliced
3/4 cup olive oil
salt
cornmeal
12 each Pizza Dough, 16 oz. balls
6 cups onion s, caramelized
3 cups Gorgonzola cheese, crumbled
3/4 cup pine nuts, toasted

To caramelize the pears, saute in oil until soft; season with salt to taste. Hold in refrigerator until needed.

To assemble each pizza, dust pizza paddle with cornmeal, and roll 16 oz. pizza dough into 12" diameter. Layer 6 oz. reserved pears, 4 oz. onions, 4 oz. mozzarella, 1-1/2 oz. Gorgonzola, and sprinkle with 1/2 oz. pine nuts. Bake at 500°F for 7 -8 minutes until golden brown. Cut each pizza into 8 slices.
