To make the cilantro sauce for the pizza, combine cumin, cilantro, olive oil, garlic, salt and pepper. Set aside until needed.
To assemble each pizza, dust surface with cornmeal and roll 16 oz. dough into 12" diameter. Combine 2 oz. poblano, 1 oz. Anaheim, 1/2 oz. ancho peppers, 5 oz. pizza sauce and spread on dough; add 5-1/4 oz. mozzarella and 4-1/2 tablespoons cilantro sauce. Bake at 500°F for 7-8 minutes until golden brown. Cut each pizza into 8 slices.
