To prepare grilled chicken, combine olive oil, salt, pepper, and southwestern seasoning. Brush over chicken, grill, julienne and reserve for service.
To assemble each pizza, dust pizza paddle with cornmeal and roll 16 oz.. dough into 12" diameter. Spread with 3 oz. BBQ sauce, 2 oz. yellow peppers, 1-1/2 oz. red onions, 8-1/2 oz. reserved chicken, 3-1/2 oz. mozzarella, 1 tablespoon cilantro. Bake at 500°F for 7-8 minutes until golden brown. Cut each pizza into 8 slices.
