1. To prepare the roasted red pepper mayonnaise, combine mayonnaise, red peppers and garlic. Puree until smooth. Refrigerate until needed.
2. For each serving, spread 1/2 oz. reserved roasted red pepper mayonnaise on 2 slices of bread. On the bottom slice of bread place 1/2 oz. salad greens. Arrange 3 oz. chicken over the greens. Top with 2 oz. mushrooms, 3 oz. fresh mozzarella and the other half of bread. Slice in half on a bias and serve.
