Original recipe yields 10 servings
1-1/2 lb. bone-in chicken breasts
5 cups water, divided
1/4 tsp. pepper
1 cup chopped onions
1 cup chopped celery
2 chicken bouillon cubes
1 cup chopped carrots
1 cup chopped potatoes
1-1/2 cups small broccoli florets
1 cup instant white rice, uncooked
1/2 lb. (8 oz.) VELVEETA®, cut into 1/2-inch cubes

Place chicken, 4 cups (1 qt.) water and pepper in large Dutch oven. Bring to boil; cover. Simmer on low heat 1 hour. Remove chicken from pot. Discard skin and bones. Cut chicken into bite-size pieces; return to pot.

Add remaining water, onions, celery and bouillon. Bring to boil. Simmer on low heat 10 min., stirring occasionally. Add carrots and potatoes; simmer 20 min.; stirring occasionally.

Add broccoli and rice; simmer 10 min. Add VELVEETA; cook 5 min. or until VELVEETA is melted.
