Melt VELVEETA and 1 stick of the butter in 1-1/2 to 2-quart casserole dish. Stir in carrots. Melt remaining 2 Tbsp. butter. Add cracker crumbs to melted butter and sprinkle on carrots. Bake at 350°F for 20 to 30 minutes. Makes 4 to 6 servings.
Note: Even kids who won't eat carrots love this dish!
