MIX matzo meal, sugar and salt. Stir in margarine and water.
BEAT egg yolks lightly. Add to matzo mixture; let stand 10 minutes. Beat egg whites until stiff peaks form. Fold into matzo mixture.
POUR about 1/4 cup batter onto hot lightly greased griddle. Cook until browned on both sides. Serve with pure maple syrup or fruit preserves. Makes 2 to 3 servings.
