1-1/2 cups spinach leaves
1 cup canned mandarin oranges (in juice), drained
3 oz. no salt added canned salmon
2 Tbsp. frozen orange juice concentrate
2 tsp. extra virgin olive oil
1/4 tsp. dried mint flakes
1/4 medium red onion, sliced and separated into rings
2 breadsticks
1/4 cup low-fat frozen yogurt
1/2 cup fresh or frozen blueberries
8 fl oz (1 cup) drinking water

Combine spinach, oranges and salmon in a large bowl. Mix orange juice concentrate, olive oil and mint in a small bowl. Season as desired with your favorite salt-free seasoning. Drizzle over salad and toss. Arrange onions on top of salad. Enjoy with breadsticks.
