1/4 cup bulgur wheat
2 tsp. extra virgin olive oil
1/8 tsp. salt
1/4 cup orange juice
2 Tbsp. fresh parsley, chopped
1/4 cup canned mandarin oranges (in juice)
1/4 cup black beans cooked or canned without added salt
1 chewy fruit-filled cookies
8 fl oz fat-free milk

Bring 1/3 cup water to boil; add bulgur, oil, and salt; cover and simmer over very low heat 5 min. Turn off heat and stir in orange juice and parsley; cover and steam for 15 min. Stir oranges and beans into bulgur.
