1 carrot, peeled and grated
1/4 cup canned mandarin oranges (in juice), drained
6 cherry tomatoes, quartered
1 Tbsp. extra virgin olive oil
2 Tbsp. orange juice
8 fl oz (1 cup) fat-free milk

Mix greens, beans, carrots, oranges and tomatoes in a large bowl. Whisk olive oil and orange juice in a small bowl. Season as desired with your favorite salt-free seasoning. Pour over vegetables; toss.
