6 asparagus spears, tough ends removed, cut into 1-inch pieces
1/3 cup instant long grain and wild rice, uncooked
1 Tbsp. lemon juice
1 tsp. extra virgin olive oil
1 tsp. honey
1/2 carrot, peeled and grated
2 cups chopped romaine lettuce

Steam asparagus just until crisp tender, then cover with ice cubes to stop cooking and retain color.
Cook rice according to package instructions.
Blend lemon juice, olive oil, and honey in a medium bowl. Add cooked rice and mix with sauce. Add carrot and asparagus; toss. Season as desired with favorite salt-free seasoning.
Arrange lettuce on plate; top with rice and vegetable mixture. Sprinkle with sunflower kernels.
Complement meal with grapes.
