Original recipe yields 1 serving
1 tsp. canola oil
1 peeled garlic clove, chopped
1/2 medium yellow onion, chopped
1 BOCA Meatless Italian Sausage, sliced and quartered
1/4 large green pepper, chopped
1/4 medium red pepper, chopped
1/2 cup reduced sodium spaghetti sauce
2 Tbsp. fresh parsley, chopped
1/4 tsp. dried basil leaves
1/4 tsp. dried oregano leaves
1-1/2 oz. spaghetti, uncooked

Heat oil over medium-high heat. Add garlic, onion, sausage and peppers to pan; sauté until peppers are soft. Add spaghetti sauce, parsley, basil and oregano; simmer 15 min., then add mushrooms and simmer 5 more min. Serve over cooked pasta.
