1 Tbsp. balsamic vinegar
1/4 tsp. sugar
1/4 tsp. dried oregano leaves
3 oz. firm or extra firm lite silken tofu, chopped
5 large black olives, sliced
1 medium tomato, chopped
2 cups fresh chopped spinach leaves
1 medium banana
1 bottle of water, 20 fl oz

Mix oil, vinegar, sugar and oregano in a bowl. Season as desired with your favorite salt-free seasoning. Add tofu, olives and tomatoes to dressing mixture; toss gently. Place on top of spinach. Enjoy with TRISCUITS on the side.
