1 carrot, peeled and sliced
1 medium red pepper, stem removed, sliced
1 cup arugula
1 cup chopped romaine lettuce
1 kiwi
8 fl oz (1 cup) fat-free milk

Blend olive oil with orange juice; season with favorite herbs or salt-free seasoning if desired.

Cook green soybeans (edamame) according to package directions. Combine mushrooms, carrots, peppers, soybeans and orange juice mixture; place on a bed of arugula and lettuce. Serve salad with WHEAT THINS crackers on the side.
