1 tsp. canola oil
1/4 medium red onion, chopped
1 medium red pepper, chopped
6 oz. firm or extra firm lite silken tofu
1/4 cup TACO BELL HOME ORIGINALS Salsa
2 slices whole wheat bread, toasted
2 tsp. trans fat free canola-based soft margarine
6 fl oz (3/4 cup) orange juice

Heat oil over medium heat in nonstick skillet. Add onion and pepper; sauté 5 min. Add tofu and salsa, chopping the tofu into the vegetables as you stir. Break up soy cheese into the pan, mixing well to melt cheese evenly throughout mixture.

Enjoy toast spread with margarine with the main dish.
