Original recipe yields 1 serving
1/2 cup instant white rice, uncooked
1 Tbsp. canola oil
1 medium green pepper, chopped
3 oz. fresh or frozen tuna fillet or steak (thawed if frozen)
1/4 cup TACO BELL HOME ORIGINALS Salsa
2 Tbsp. mirin (sweet rice wine)
1/2 cup frozen corn
8 fl oz (1 cup) MAXWELL HOUSE Coffee, Regular or Decaf

Cook rice according to package directions. Add your favorite fresh or dried herbs to season.

Heat oil over medium heat; add peppers. Sauté 2 to 3 min. Add tuna fillets and sprinkle 1 Tbsp. water over top; increase heat to high and brown each side 2 min. Reduce heat to medium-low; add salsa and wine. Cover and simmer 10 min. Serve over rice.

Heat corn as directed on package.

Serve a cup of coffee with the meal.
