Arrange tofu slices in a shallow baking dish; brush both sides with dressing. Brush remaining dressing on vegetables. Coat grill basket with cooking spray; start grill. Place tofu and vegetables carefully into grill basket; avoid breaking the tofu slices. Grill about 10 min., turning tofu once and vegetables 2 to 3 times.
Cook rice according to package directions. Stir in parsley; cover until ready to serve.
