Cook and stir peppers and onions in nonstick skillet on medium heat 5 min. or until crisp-tender, stirring frequently. Place in medium bowl. Add cooked grits, 3/4 cup cheese and salt; stir until blended. Add eggs; mix well.
Pour into 8-inch square baking dish sprayed with cooking spray; sprinkle with remaining cheese.
Bake 30 min. or until center is set. Let stand 10 min. before serving.
