Let's Make It
Stir boiling water into dry gelatin in large bowl at least 2 minutes until completely dissolved. Add cold water, lemon zest and juice; stir until well blended. Refrigerate 1-1/2 hours or until thickened (spoon drawn through leaves definite impression).
Add peppers and onions; pour into 5-cup mold.
Refrigerate 4 hours or until firm. Unmold onto serving plate. Store leftover gelatin in refrigerator.
For a spicy version, add 1 chopped jalapeno pepper.
