A cheesy mushroom mixture is stuffed into chicken drumsticks and baked to perfection in this delicious dish for four.
What You Need
Original recipe yields 4 servings
4 medium mushrooms, finely chopped
1 medium carrot, shredded
1/2 of a medium red pepper, chopped
1/2 cup KRAFT Shredded Cheddar & Monterey Jack Cheeses
8 chicken drumsticks (1-1/2 lb.)
1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix

Let's Make It
Preheat oven to 400°F. Combine mushrooms, carrots, red peppers and cheese. Pull away the skin from each drumstick to form a pocket. Spoon the mushroom mixture evenly into pockets. Secure with toothpicks.
Coat chicken with coating mix as directed on package. Place in single layer on foil-covered baking sheet.
Bake 40 minutes or until chicken is cooked through. Remove and discard toothpicks.
Serve with hot cooked rice, a mixed green salad and fresh fruit for dessert.
