A blend of tomatoes, onions and black olives gives this Super-Easy Fish Skillet its terrific Mediterranean-style flavor.
What You Need
Original recipe yields 4 servings
1 cup chopped red onion s
2 Tbsp. KRAFT Sun Dried Tomato Vinaigrette Dressing
1 can (14-1/2 oz.) stewed tomatoes, undrained
1 green pepper, chopped
1/2 cup pitted black olives
4 frozen haddock fillets (1 lb.), thawed

Cook onions in dressing in large skillet on medium heat 5 min. or until crisp-tender, stirring occasionally. Add tomatoes, peppers and olives; mix lightly.
Top with fish; cover. Simmer on medium heat 8 to 10 min. or until fish flakes easily with fork.
Serve fish topped with sauce.
For a flavor boost, add minced garlic and crushed red pepper to taste to the cooked onions with the tomatoes, peppers and olives.
Prepare using halibut or cod fillets.
