You say yuca, we say cassava, let's call the whole thing beside the point! What counts is how good it tastes mashed with garlic and lime juice!
What You Need
Original recipe yields 8 servings
2 lb. yuca (cassava), peeled, cut into 2-inch chunks
4 cloves garlic, minced, divided
1/2 cup KRAFT Zesty Italian Dressing
1/2 tsp. ground black pepper
1/2 tsp. ground cumin
1/4 cup chicken stock
1/4 cup lime juice
1/2 cup KRAFT Shredded Mozzarella Cheese
1/4 cup chopped fresh parsley

Let's Make It
Mix yuca and half of the garlic in large saucepan. Add enough cold water to completely cover the yuca. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 20 min. or until yuca is tender.
Meanwhile, combine remaining garlic, the dressing, black pepper and cumin in small saucepan; cook on medium heat 4 min. or until heated through, stirring occasionally. Add chicken stock and lime juice; mix well. Bring to boil. Remove from heat.
Drain yuca; place in serving bowl. Add dressing mixture; mix lightly. Sprinkle with cheese and parsley.
Yuca is available year round. Look for firm, well-formed tubers, free of blemishes, with a clean fresh scent. Store whole yuca in a cool, dark dry place for up to 1 week. Store peeled yuca in the refrigerator covered with water. Or, wrap whole yuca and freeze for several months.
For a sweeter flavor, substitute orange juice for the lime juice.
