Cook yams in boiling water 5 min. or until yams are almost tender; drain. Place in large bowl; cool.
Place dressing, garlic and adobo seasoning in blender container; cover. Blend on medium speed until well blended. Pour over yams; cover. Refrigerate 30 min. to marinate.
Drain yams, reserving the marinade. Arrange tomatoes in single layer on large platter; top with the onions and yams. Drizzle with the reserved marinade. Sprinkle with cheese.
Prepare as directed, substituting sweet potatoes for the yams.
For extra color, sprinkle with chopped red and green pepper just before serving.
