Let's Make It
Heat grill to low heat.
Grill plantains 15 to 20 min. or until blackened and softened, turning frequently.
Trim ends of plantains; remove peels. Diagonally cut each plantain into 8 slices.
Serve topped with remaining ingredients.
Choose a yellow plantain that is slightly soft but not blackened. It will have a mild almost squashlike flavor and is used like a potato. When grilled it will have a sweet flavor and soften in texture. It will completely blacken on the grill.
To serve as a dessert, grill and slice plantains as directed. Serve topped with grilled fruit and dollops of thawed COOL WHIP Whipped Topping.
