2 tsp. oil
4 small boneless skinless chicken breasts (1 lb.)
2 cups frozen Asian mixed vegetables (broccoli florets, green beans, sliced mushrooms, red pepper strips, sugarsnap peas)
1/4 cup MIRACLE WHIP Dressing
1 Tbsp. lite soy sauce
4 cloves garlic, minced
3 cups hot cooked long-grain white rice

Heat oil in large nonstick skillet on medium heat. Add chicken; cook 4 min. on each side or until evenly browned on both sides. Meanwhile, combine all remaining ingredients except rice.

Spoon vegetable mixture over chicken; cover. Cook 7 min. or until chicken is done (165ºF).

Serve over rice.
