Toasted pumpkin seeds and cracker crumbs add texture to this creamy tomatillo sauce, a traditional Guatemalan topping served over chicken and rice.

Original recipe yields 10 servings
1/2 cup pumpkin seeds
3-1/2 lb. boneless skinless chicken breast s, cut into 2-inch pieces
1 qt. (4 cups) chicken broth
1-1/2 lb. tomatillo s, husks removed, cored and chopped
1 cup chopped cilantro
1 cup chopped green onion s
24 RITZ Crackers, crushed
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Place pumpkin seeds in large skillet; cook and stir on medium heat 2 min. or until lightly toasted. Spread onto paper towel; cool.
Meanwhile, place chicken in large skillet. Add broth; cover. Cook on medium heat 15 min. or until chicken is cooked through, stirring occasionally. Remove chicken from skillet, reserving 3 cups of the broth; cover chicken to keep warm.
Pour half of the reserved broth into blender. Add half each of the pumpkin seeds, tomatillos, cilantro, onions and cracker crumbs; cover. Blend until smooth; pour into skillet. Repeat. Cook on medium-high heat 5 min. or until heated through, stirring occasionally. Reduce heat to low. Add sour cream; stir until well blended. Return chicken to skillet; cover. Simmer 10 min. or until heated through.
This traditional dish from Guatemala, called "Jocon," is served typically with hot cooked white rice.
The sauce can also be served with cooked beef or pork.
