Original recipe yields 12 servings
1/2 cup KRAFT Zesty Italian Dressing, divided
2 green plantain s, peeled, cut into 24 (1/4-inch-thick) slices (about 1-1/2 lb.)
1/2 cup refried black beans
4 jalapeño pepper s, thinly sliced
1 large tomato, seeded, chopped
1 cup KRAFT Shredded Sharp Cheddar Cheese
1/2 cup BREAKSTONE'S or KNUDSEN Sour Cream

Preheat oven to 400°F. Heat 2 Tbsp. of the dressing in large skillet on medium heat. Add plantains, a few at a time; cook 3 min. on each side. Remove from skillet; flatten with rolling pin or other hard flat surface. Using 1 Tbsp. of the remaining dressing at a time, cook flattened plantains in skillet 1 to 2 min. or until golden brown.
Place plantains on baking sheet. Spoon 1 tsp. beans on each; top with peppers and tomatoes. Sprinkle evenly with cheese. Bake 5 min. or broil, 3 to 5 inches from heat source, 3 min. or until cheese melts.
Top evenly with sour cream. Serve immediately.
Top with chopped fresh cilantro, chopped avocado or your favorite salsa for added fun and flavor!
How to Peel Plantains
Place plantains in very hot water for easier peeling; let them sit in the water for a few minutes. Cut off about 1 inch from both ends; make 2 lengthwise cuts at opposite ends of the plantain. Slide your hand under the skin and begin to pull it away, going from top to bottom. Soak the peeled plantains in salted water until ready to use. Drain on paper towel before cooking.
