Cook chicken in large nonstick skillet on medium heat 2 to 3 min. on each side or until lightly browned on both sides. Remove chicken from skillet; set aside.
Add water and rice to skillet; stir. Bring to boil. Return chicken to skillet; cover. Cook on medium heat 5 min. or until chicken is done (165�F). Remove skillet from heat. Let stand, covered, 5 min. or until rice is tender and liquid is absorbed.
Meanwhile, microwave 2% Milk VELVEETA and salsa in microwaveable bowl on HIGH 2 min. or until VELVEETA is completely melted and mixture is well blended, stirring after each minute.
Serve chicken and rice topped with VELVEETA sauce.
Serve with hot steamed broccoli florets tossed with KRAFT Grated Parmesan Cheese.
