Hot and sweet - our pico de gallo with pineapple is both. This flavorful salsa pairs well with chicken and creamy cheese in these delicious wrap sandwiches.
What You Need
Original recipe yields 4 servings
2 cups finely chopped fresh pineapple
1/4 cup finely chopped red onion s
2 Tbsp. chopped fresh cilantro
1 Tbsp. finely chopped jalapeño pepper s
1 Tbsp. lime juice
2 cups shredded cooked chicken
1/4 cup KRAFT Zesty Italian Dressing
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Cream Cheese Spread
2 Tbsp. TACO BELL® Thick & Chunky Salsa
4 flour tortilla s (10 inch)
4 leaf lettuce leaves
1 large tomato, cut into 8 thin slices, halved

Let's Make It
Combine first 5 ingredients.
Toss chicken with dressing. Mix cream cheese spread and salsa until blended; spread onto tortillas. Top with lettuce, tomatoes, chicken mixture and half the pineapple mixture; roll up, tucking in both sides of each tortilla as it is rolled. Secure with toothpicks; cut in half.
Serve with remaining pineapple mixture.
Prepare using PHILADELPHIA 1/3 Less Fat than Cream Cheese.
Purchase peeled and cored fresh pineapple, found in the produce section of most larger supermarkets, to make the pineapple pico de gallo. And to shorten the prep time even more, use a purchased rotisserie chicken for the shredded cooked chicken.
The flavorful pineapple pico de gallo can be prepared ahead of time. Store in tightly covered container in refrigerator up to 2 days before using as directed.
