Season chicken with pepper; top with ham and cheese. Roll up, starting at one short end of each breast.
Mix bread crumbs, margarine and paprika. Dip chicken in egg, then in crumb mixture, turning to evenly coat both sides of each breast. Place in single layer in baking dish sprayed with cooking spray.
Bake 30 min. or until chicken is done and golden brown.
Makeover - How We Did It
We took a favorite recipe and made it over by decreasing the ham and cheese filling, coating the chicken in crispy bread crumbs, and baking the chicken instead of frying it. With these changes, you'll get the same great taste but will save 170 calories and 11g of fat, including 5.5g of saturated fat, per serving.
Typically used in Japanese cooking, the coarser texture of the panko bread crumbs helps create deliciously crunchy crusts. Look for them near the other coating and bread crumb products in your local supermarket.
