Original recipe yields 10 servings
1 pkg. (4 oz.) BAKER'S White Chocolate
2 Tbsp. whipping cream
1-1/2 tsp. butter or margarine
6 drops peppermint extract
40 vanilla wafers
4 starlight mints, crushed

Microwave chocolate, cream and butter in microwaveable bowl on HIGH 1 to 1-1/2 min. or until butter is melted, stirring after 1 min. Stir until chocolate is completely melted. Blend in extract.
Refrigerate 3 hours or until firm.
Shape 1 tsp. chocolate mixture into 1/2-inch ball; place between 2 wafers to form sandwich. Press together gently. Roll edge in crushed mints; place on waxed paper-covered baking sheet. Repeat to make 20 cookie sandwiches.

How to Easily Crush Candies
Crushing hard candies, such as starlight mints, can be a messy task. To keep candy pieces contained, place mints in resealable plastic bag; seal bag. Use rolling pin or meat mallet to crush the candy into small pieces.
Peppermint filling can be made ahead of time. Prepare and shape into balls as directed; place on waxed paper-covered baking sheet. Cover tightly; refrigerate up to 1 week. When ready to assemble sandwiches, remove from refrigerator; let stand at room temperature 15 min. to soften slightly. Place between wafers and roll in crushed mints as directed.
