Peel potatoes, then mash in medium bowl. Add egg, ham and cheese sauce; mix until blended. Refrigerate 30 min. Shape into 12 nuggets; roll in cracker crumbs until evenly coated.
Heat oil in medium saucepan on medium-high heat. Add potato nuggets, in batches; cook 5 min. or until golden brown, turning as needed. Drain on paper towels. Serve warm with ketchup.
