Let's Make It
1
Mix first 3 ingredients in medium bowl. Add 1 cup water; mix with hands until mixture forms smooth dough. Divide into 16 balls; flatten into 3-inch discs.
2
Heat oil in medium skillet to 375ºF. Add dough, in batches; cook 30 to 45 sec. on each side or until golden brown on both sides. Drain on paper towels; cover to keep warm.
3
Bring remaining water and vinegar to boil in large skillet. Reduce heat to keep water gently simmering. Break 4 eggs, 1 at a time, into small cup or bowl. Holding cup close to water's surface, gently slip egg into water; cover. Cook 3 to 4 min. or until whites are completely set and yolks begin to thicken but do not become firm. Remove eggs from skillet with slotted spoon; place on plate. Repeat with remaining eggs.
4
Place 2 salbutes (fried dough discs) on each of 8 plates, with edges slightly overlapping. Top with chorizo, eggs, cheese, salsa and chives.
Kitchen Tips
Serving Suggestion
Serve with fresh fruit.
Food Facts
The vinegar in the cooking water helps the cooked eggs hold their shape by causing the outer layer of the egg whites to congeal faster.
How to Poach an Egg in the Microwave
Fill a 1-cup microwaveable bowl or mug with 1/2 cup water. Gently crack egg into water, making sure egg is completely covered with water. Cover bowl and microwave on HIGH 1 min. or until white is set and yolk is runny. Use slotted spoon to transfer egg to plate. Repeat with remaining eggs.
Substitute
Prepare using your favorite salsa.
