Knock socks off with this simple but sumptuous Seafood Stew starring mussels, shrimp and chunks of snapper. Our Seafood Stew is ready in 45 minutes.

Original recipe yields 12 servings
6 slices OSCAR MAYER Bacon, chopped
1 recipe Red Sofrito
1 small onion, sliced
1 qt. (4 cups) fat-free reduced-sodium chicken broth
1 can (14.5 oz.) diced tomatoes, undrained
1 cup canned unsweetened coconut milk
1/2 cup fresh cilantro
1 serrano chile
1-1/2 lb. mussels, cleaned, scrubbed with beards removed
1 lb. skinless red snapper fillets, cut into 8 pieces
1 lb. uncooked medium shrimp, peeled, deveined

Cook bacon in 7-qt. stockpot. Use slotted spoon to remove bacon from pan, reserving 1 tsp. drippings in pan. Drain bacon on paper towels. Add Red Sofrito and onions to pan; cook 3 min., stirring frequently. Stir in next 5 ingredients; bring to boil. Simmer on low heat 10 min.

Add mussels; cover. Cook 2 min. Add red snapper; cook, covered, 2 min. Add shrimp; cook, covered, 4 min. or until shrimp turn pink. Discard any unopened mussels.

Top stew with bacon.
