Place cookies in single layer in shallow parchment paper-lined pan. Cut banana into 12 slices.
Pour half the melted chocolate into small resealable plastic bag; set aside. Dip bottoms of banana slices, 1 at a time, in remaining melted chocolate; place on cookies. Snip small piece off bottom corner of chocolate-filled bag; drizzle chocolate over bananas. Top with sprinkles.
Freeze 3 hours. Let stand at room temperature 5 min. before serving.
