This garlic soup doubles up on smoky goodness, with generous pieces of smoked bacon and a sprinkle of smoked paprika.
What You Need
Original recipe yields 4 servings
6 slices OSCAR MAYER Natural Smoked Uncured Bacon, cut into 1/2-inch pieces
3/4 cup coarsely chopped yellow onion s
1 head garlic, separated into cloves, peeled
1/2 tsp. smoked paprika
1 bay leaf
2 cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth
1 baking potato (6 oz.), peeled, chopped
1 green onion, thinly sliced

Cook and stir bacon in large saucepan on medium heat until crisp. Remove bacon from pan with slotted spoon, reserving 1 Tbsp. drippings in pan. Drain bacon on paper towels.
Add onions, garlic, paprika and bay leaf to drippings in pan; cook and stir 10 min. or until onions are tender. Add broth and potatoes; stir. Bring to boil; simmer on medium-low heat 10 min. or until potatoes are tender.
Discard bay leaf. Blend soup, in batches, in blender or food processor until smooth. Return soup to saucepan; stir in bacon. Serve topped with green onions.
Top each serving with a dollop of BREAKSTONE'S or KNUDSEN Sour Cream.
