Serve up something different next time you make chicken for dinner—like these sweet roasted carrots with yummy mashed yuca covered with cheese.
What You Need
Original recipe yields 6 servings
1/2 cup KRAFT Zesty Italian Dressing
1/2 cup fresh cilantro
1/2 cup chopped green pepper
3 cloves garlic
1 chicken (3-1/2 lb.), cut up
1 lb. carrot s, peeled
2 lb. yuca (cassava), peeled, cut in half and cored
1/4 cup KRAFT Grated Parmesan Cheese

Heat oven to 375ºF.
Blend first 4 ingredients in blender until smooth. Reserve half; coat chicken with remaining mixture.
Place chicken over carrots in foil-lined baking pan. Bake 45 to 55 min. or until chicken is done (165°F).
Meanwhile, cook yuca in boiling water 25 min. or until tender; drain. Warm reserved dressing mixture; add to yuca in medium bowl. Mash; keep warm.
Top chicken and vegetables with cheese just before serving.
Check yuca after cooking to remove any leftover core. For a thinner yuca mash, add up to 1/2 cup hot water.
Stir 2 Tbsp. chopped fresh cilantro into yuca mash.
