What You Need
Original recipe yields 4 servings
1 lb. boneless skinless chicken breasts, cut into bite-size pieces
2 cups instant white rice, uncooked
2 cups boiling water
1 red pepper, chopped
1 pkg. (1-1/4 oz.) TACO BELL® Taco Seasoning Mix
3/4 cup TACO BELL® Thick & Chunky Salsa
1 cup KRAFT Shredded Cheddar Cheese

Heat oven to 400°F.
Combine all ingredients except salsa and cheese in 8-inch square baking dish; cover.
Bake 35 min. or until chicken is done.
Top with salsa and cheese; bake, uncovered, 10 min. or until cheese is melted and liquid is absorbed.
Substitute 1 cup frozen mixed vegetables for the red pepper.
Sprinkle with 1 chopped green onion.
