Let's Make It
Heat oven to 375ºF.
Add potatoes to large saucepan of boiling water; cook 20 to 25 min. or until tender.
Meanwhile, whisk Neufchatel, milk and seasoning until blended; set aside. Brown meat with onions in large nonstick skillet on medium heat. Add flour; cook and stir 1 min. Add frozen vegetables and broth; mix well. Stir in 1/4 cup Neufchatel mixture; cook and stir 2 to 3 min. or until slightly thickened. Pour into 8-inch square baking dish sprayed with cooking spray.
Drain potatoes, reserving 1/4 cup cooking water. Return potatoes and reserved water to pan; mash until potatoes are smooth. Stir in remaining Neufchatel mixture; spread over meat mixture.
Bake 25 to 30 min. or until heated through.
How to Soften the Neufchatel
Place completely unwrapped package of Neufchatel in microwaveable bowl. Microwave on HIGH 10 sec. or just until softened.
This is a great way to use leftover mashed potatoes. Microwave 2 cups mashed potatoes in covered microwaveable container on HIGH 2 to 4 min. or until heated through before using as directed.
Drink plenty of water before meals or parties to help curb your appetite and better manage food choices and portions.
