Our one-pot chili is thick with beans and tender chunks of chicken breast. Serve with a dollop of sour cream and prepare yourself for compliments.
What You Need
Original recipe yields 7 servings
3 onion s, chopped
1 jalapeño pepper, stemmed, seeded and finely chopped
1/4 cup KRAFT Zesty Italian Dressing
1 lb. boneless skinless chicken breast s, cut into bite-size chunks
8 fresh mushroom s, sliced
1 Tbsp. flour
2 cans (15.5 oz. each) white beans, rinsed
1 can (14 oz.) chicken broth
1/4 cup fresh cilantro, chopped
1 bay leaf
1 tsp. each ground cumin and dried oregano leaves
3/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

Cook and stir onions and peppers in dressing in large saucepan on medium-high heat 3 to 5 min. or until crisp-tender. Add chicken and mushrooms; cook and stir 3 to 5 min. or until chicken is lightly browned. Stir in flour; cook and stir 1 min.
Add beans, broth and seasonings; stir. Bring to boil; simmer on low heat 10 to 15 min. or until chicken is done. Remove and discard bay leaf.
Serve topped with sour cream.
This is a great use for leftover cooked chicken or turkey. Just cut into bite-size pieces and add to the chili along with the beans.
For a spicier chili, substitute serrano peppers for the jalapeño peppers. Or, use a combination of the two.
