Original recipe yields 8 servings
2 tsp. oil
2 carrot s, finely chopped (about 1/2 cup)
1 onion, finely chopped
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1 cup barley, uncooked
1/2 cup KRAFT Shredded Parmesan Cheese
1/4 cup tightly packed fresh basil, thinly sliced

Heat oil in large saucepan on medium-high heat. Add vegetables; cook and stir 5 to 7 min. or until crisp-tender.
Stir in broth and barley; bring to boil. Simmer on medium-low heat 30 min. or until barley is tender and liquid is absorbed, stirring occasionally. Remove from heat.
Add cheese and basil; mix well.
Substitute 4 tsp. dried basil leaves for the sliced fresh basil.
Store uncooked barley in airtight container at room temperature up to 9 months.
