This fast and easy casserole is just layer after layer of beef, yuca and cheddar cheesy deliciousness.
What You Need
Original recipe yields 4 servings
1 lb. lean ground beef
1/4 cup KRAFT Zesty Italian Dressing
1 green pepper, chopped
1 can (8 oz.) tomato sauce
4 cups hot cooked yuca (cassava) cubes
1 cup KRAFT Shredded Cheddar Cheese

Brown meat in dressing in large skillet. Add peppers and tomato sauce; cook 10 min. or until peppers are tender and mixture is slightly thickened, stirring occasionally.
Layer half the meat mixture in 9-inch square baking dish. Top with layers of half each of the yuca and cheese; repeat layers.
Broil, 6 inches from heat, 1 to 2 min. or until cheese is melted.

How to Peel and Cook Yuca
Yuca has a thick brown skin which needs to be peeled before use, revealing a crisp white flesh inside. The tuber has a tough fibrous core that also needs to be removed before use. Use a sharp knife to remove both the peel and the inner core. Cut yuca into small pieces, then place in saucepan of water and bring water to boil. Cook on medium-low heat 25 to 30 min. or until yuca is fork-tender. Drain, then use as desired.
Prepare and assemble dish except for the top layer of cheese up to a day ahead. Bake, covered, in 350°F oven 20 to 25 min. or until heated through. Uncover, top with cheese; bake 3 min. or until cheese is melted.
