What You Need
Original recipe yields 8 servings
1/2 cup KRAFT Italian Vinaigrette Dressing, divided
1 lb. boneless skinless chicken breast s, cut into thin strips
1 red onion, thinly sliced
1/2 lb. fresh mushroom s, sliced
1 small zucchini, coarsely chopped
1/2 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
2-2/3 cups penne pasta, cooked
1/4 cup KRAFT Grated Parmesan Cheese

Let's Make It
Heat 2 Tbsp. dressing in large skillet on medium heat. Add chicken; cook and stir 4 min. or until done.
Add onions and 1/4 cup of the remaining dressing; cook 2 min., stirring occasionally. Add mushrooms, zucchini and remaining dressing; simmer on medium-low heat 8 min. or until liquid is absorbed. Stir in mayo.
Spoon chicken mixture over pasta; top with cheese.
For added color and flavor, garnish with chopped fresh Italian parsley just before serving.
Serve this family-pleasing entrée with a crisp tossed green salad.
