Loaded with lean ground beef, tomatoes and beans, this Creamy Velveeta Chili takes the chill off a winter's day. For extra heat add more green chiles!
What You Need
Original recipe yields 6 servings
1 lb. extra-lean ground beef
2 stalks celery, chopped
1 onion, chopped
1 tsp. ground cumin
1 can (15-1/2 oz.) kidney beans, rinsed
1 can (14-1/2 oz.) no-salt-added diced tomatoes, undrained
1 can (10 oz.) RO*TEL Diced Tomatoes & Green Chilies, undrained
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes

Let's Make It
Brown meat with celery and onions in large skillet on medium-high heat, stirring occasionally; drain.
Stir in cumin; cook 1 min. Add beans, tomatoes and tomatoes and chilies; mix well. Bring to boil; simmer on low heat 30 min., stirring occasionally.
Add VELVEETA; stir. Let stand 5 min. before serving.
For added heat, omit the plain diced tomatoes and use 2 undrained cans (10 oz. each) RO*TEL Diced Tomatoes & Green Chilies.
Serve topped with chopped fresh tomatoes, onions and cilantro.
How to Cube VELVEETA
Cut measured amount of VELVEETA into slices, about 1/2 inch thick. Cut each slice crosswise in both directions to make cubes.
