Original recipe yields 6 servings
2 red peppers, cut into strips
1 onion, sliced
2 Tbsp. oil
1 Tbsp. lemon juice
6 small boneless skinless chicken breasts (1-1/2 lb.)
1 pkt. SHAKE 'N BAKE Chicken Coating Mix
12 flour tortillas (8 inch), warmed

Heat oven to 400°F.
Place vegetables in 13x9-inch pan. Add oil and lemon juice; mix lightly.
Coat chicken with coating mix as directed on package; place over vegetables.
Bake 15 min. or until chicken is done (165°F). Slice chicken; place on tortillas. Top with vegetables; roll up.
Omit tortillas. Serve the baked chicken and vegetables over hot cooked rice.
