This Simple Coconut Pineapple Ginger Smoothie has terrific tropical flavor, but it really is simple to make. (As in three-ingredients-plus-ice simple.)
What You Need
Original recipe yields 1 serving
1 cup pineapple chunks
1 cup coconut milk
1 tsp. finely chopped gingerroot, finely chopped

Let's Make It
Place the first three ingredients in a blender and blend until smooth. Then, add in the ice cubes and blend on high speed until completely smooth. Or, like I like it, leave the ice somewhat chunky. Serve with a straw!
