Creamy, cheesy and crunchy! This dish has all three. Chicken, tomato sauce and cheese are tossed with pasta, then finished with a crumb topping.
What You Need
Original recipe yields 6 servings
2 tsp. butter
10 RITZ Crackers, finely crushed (about 1 cup)
1/3 cup chopped fresh parsley, divided
1 garlic, minced
2 tsp. KRAFT Grated Parmesan Cheese
1-3/4 cups elbow macaroni, uncooked
1-1/2 lb. boneless skinless chicken breast s, cut into bite-size pieces
2 cans (8 oz. each) tomato sauce
3 KRAFT Singles, cut up
3/4 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese

Let's Make It
Melt butter in large nonstick skillet on medium heat. Add cracker crumbs, 2 Tbsp. parsley and garlic; cook 2 min. or until crumbs are golden brown, stirring frequently. Place in small bowl; stir in Parmesan.
Cook macaroni as directed in package. Meanwhile, cook chicken, in batches, in same skillet 2 to 3 min. or until no longer pink, stirring frequently. Return all the chicken to skillet. Add tomato sauce and remaining parsley; cover. Simmer on medium-low heat 5 min. Add Singles; cook and stir 1 to 2 min. or until melted.
Drain macaroni. Add to chicken mixture in skillet; stir. Cook and stir 1 min. or until heated through. Top with mozzarella; cover. Remove from heat; let stand 2 min. or until melted. Top with crumb topping.
For an extra kick, stir 1 tsp. crushed red pepper into ingredients in skillet along with the tomato sauce and remaining parsley.
Cooking the chicken in batches allows it to brown more evenly.
