This creamy Asian coleslaw is as good looking as it is delicious—layered with shredded carrots, bright-green snow peas, red peppers and green onions.
What You Need
Original recipe yields 12 servings
1/2 head napa cabbage, shredded
5 carrot s, shredded
2 cups snow peas, blanched
1 red pepper, cut into strips, halved
1 pkg. (3 oz.) ramen noodle soup mix
1 bunch green onion s, chopped
1 cup MIRACLE WHIP Light Dressing
1 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream

Let's Make It
Layer first 4 ingredients in large bowl. Break apart Noodles; sprinkle over peppers. Top with onions.
Mix dressing, sour cream and contents of Seasoning Packet until blended; spread over salad, sealing dressing mixture to edge of bowl.
Refrigerate several hours.
How to Blanch Snow Peas
Add snow peas to large pot of boiling water; cook 1 min. or until peas turn bright green. Drain, then immediately plunge peas into bowl of ice water. When completely cool, drain snow peas and pat dry.
Bok choy, also called Chinese white cabbage, is a mild versatile vegetable that resembles a bunch of wide-stalked celery with crisp, green leaves. Bok choy is also an excellent source of both vitamins A and C.
