Cook potatoes and 1 Tbsp. ginger in boiling water in large saucepan 10 min. or until tender. Drain in colander.
Heat dressing in same saucepan on medium-high heat. Add onions and remaining ginger; cook and stir 5 min.
Add potatoes; mash lightly. Stir in remaining ingredients; cook on medium heat until heated through, stirring occasionally.
Prepare using KRAFT Lite Zesty Italian Dressing, and BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream.
Garnish with a light sprinkling of ground cinnamon just before serving.
