The citrus and cream cheese filling makes up just half of the deliciousness in these easy pies. The crust is made with crushed shortbread cookies. Yum!

Original recipe yields 16 servings
2-1/2 cups finely crushed square shortbread cookie s
6 Tbsp. butter, melted
zest and 1/4 cup juice from 2 orange s, divided
2 pkg. (8 oz. each) PHILADELPHIA Cream Cheese, softened
zest and juice from 1 lime
2 tubs (8 oz. each) COOL WHIP Whipped Topping, thawed, divided
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
1 can (14 oz.) sweetened condensed milk

Mix cookie crumbs, butter and half the orange zest until blended; press half onto bottom and up side of each of 2 (8-inch) pie plates. Refrigerate 15 min.

Beat cream cheese, lime zest and lime juice in large bowl with mixer until blended. Gently stir in 1-1/4 cups COOL WHIP. Spoon evenly into crusts.

Beat dry pudding mix, condensed milk and orange juice in medium bowl with whisk 2 min. Stir in 1 tub COOL WHIP; spread over pies. Stir remaining orange zest into remaining COOL WHIP; spread over pudding layers.

Refrigerate 4 hours or until firm.

Add a simple citrus fan garnish. Use sharp knife to cut additional orange or lime into thin slices. Stack 3 slices. Cut slit through slices to center. Twist slices from slits in opposite directions; twist 3 slices together to give fan effect. Use to garnish pies just before serving.

How to Grate Citrus Peel
Always wash and dry citrus fruit before grating. Move the whole fruit up and down on the side of the grater with the smallest holes to remove ONLY the surface of the fruit peel. (The inner white part is bitter.) Continue to grate the fruit until you have the desired amount of grated peel, rotating the fruit on the grater as necessary. Use a pastry brush or old clean toothbrush to aid in cleaning grater.
